    Cacciatore is an Italian word that means “”hunter.”” Chicken cacciatore is a hunter-style stewed chicken with herbs, seasonings, tomatoes, onions, chopped veggies, and, most importantly, tomato sauce. 

    Note: You can also use sun-dried tomatoes if you want a more fresh and sweet effect in your dish. 

    This one-pot meal has a different cooking style in every household because once the chicken cacciatore becomes comfort food for someone, they like to cook in their class.

    Some people add mushrooms, and some like to use other vegetables with different sauces according to their liking.

    How to Make Chicken Cacciatore?

    Ingredients

    • 6 chicken thigh bone in, skin on pieces
    • 8 oz. mushrooms, cleaned and sliced
    • ½ cup green bell pepper, chopped
    •  cup red bell pepper, chopped
    • 1 small yellow onion, chopped
    • 2 celery ribs, chopped
    • 2 tbsp fresh parsley, chopped
    • 3 garlic cloves, minced
    • 28 oz can of crushed tomatoes
    • 3 sprigs of fresh thyme
    • 1 tsp oregano
    • Pinch of red pepper flakes
    • Extra virgin olive oil
    • Black pepper and kosher salt

    Season and Brown the Chicken

    Season the chicken first. Sprinkle extra virgin olive oil on the chicken pieces. Make sure it also gets underneath the skin. Heat extra virgin oil in a large pan with a lid. Brown the chicken on both sides over medium heat. You should start with the skin side down first. Now set the chicken aside. 

    Cook the Veggies and Mushrooms 

    Place your pan or braiser back to the heat. Cook onions, peppers, celery, garlic, and mushrooms over medium heat. Add herbs and spices and season with salt and pepper. Seasonings in this chicken and mushroom recipe include:

    • Oregano: 1 tsp.
    • Sprigs thyme: 2
    • Fresh parsley 2 Tbsp.
    • Red pepper flakes: A pinch

    Toss the vegetables around until they soften nicely. Include garlic and cook some more. 

    1. Make the Sauce

    Add crushed tomatoes to the veggies and cook until the sauce bubbles gently. This might take 10 minutes or so).

    2. Add the Chicken and Cook

    Settle the chicken in the sauce. Cook over low flame for about 30 minutes. It’sIt’s time for it to cook through and get tender. Add some parsley garnish if you wish. Your hearty chicken cacciatore with mushrooms are ready to serve. 

    Slow Cooker or Crock-Pot Chicken Cacciatore

    To make the same recipe in a slow cooker, the following:

    • Add virgin olive oil, brown the chicken and transfer it to the slow cooker. 
    • Add garlic, onions, mushroom, celery, and bell pepper on the chicken top.
    • Season it with black pepper, kosher salt, spices, and herbs. 
    • Pour crushed tomatoes all over the chicken and vegetables. 
    • Cover the slow cooker. Then set it to “”low”” for 8 hours. You can also set it to “”high”” for 4 hours.

    Ingredients
      

    • 6 chicken thighs bone-in, skin on, excess fat trimmed
    • Kosher salt and black pepper
    • Extra virgin olive oil
    • 1 yellow onion small and chopped
    • 8 oz. mushrooms cleaned and sliced
    • ½ cup red bell pepper chopped
    • ½ cup green bell pepper chopped
    • Pinch of red pepper flakes
    • 3 garlic cloves minced
    • 2 celery ribs chopped
    • 28 oz of canned crushed tomatoes
    • 3 sprigs of fresh thyme
    • 2 tbsp fresh parsley chopped
    • 1 tsp oregano

    Instructions
     

    • Firstly, pat the chicken dry and sparkle with the seasonings of salt and pepper on all sides.
    • Take a large pan, and add 2 tbsp of extra virgin olive oil; heat it on medium-high flame until sparkled (not smoking).
    • Add the chicken pieces and cook for about 8 minutes until browned well from each side. Once it is done, remove the chicken from the pan, set it aside, and let it cool.
    • Add garlic, chopped onions, peppers, celery, and mushrooms in the same pan. Cook on medium heat, and mix gently.
    • Add kosher salt, black pepper, oregano, red pepper flakes, fresh thyme, and parsley. Cook all the ingredients well for 5-6 minutes until blended.
    • Next, add the crushed tomatoes into the mixture and let it cook for 5-10 until it starts to bubble and make a thick texture (keep the heat medium-high).
    • Add the chicken pieces to the same mixture and let it cook for about 30 minutes or until cooked well.
    • Lastly, garnish the luscious chicken cacciatore with fresh parsley if you want. Serve and Enjoy!
