    Step 1 – Cook the Beef

    • 2 ½ pounds of boneless beef cubes
    • 3 medium potatoes total of 12 ounces
    • 3 medium carrots total of 12 ounces
    • 2 cloves of garlic minced
    • 1 medium onion
    • ¾ cups of frozen peas
    • 2 tbsp of olive oil
    • 2 tbsp of Worcestershire sauce
    • 1 tbsp of tomato paste
    • 1 tsp of oregano
    • 1 ½ tsp of salt add more if needed
    • 1 tsp of black pepper add more if needed
    • 1 tbsp of cornstarch
    • 1 tbsp of water
    • Fresh parsley or basil optional

    Instructions
     

    • Add 2 tbsp of olive oil to a pot and heat it.
    • Add the beef cubes and stir for 5-10 minutes until browned from all sides.
    • Meanwhile, cut onion, garlic, carrots and potato in large sizes.
    • Now you may take out the beef from the pot; make sure it is cooked well and put it aside.
    • Add minced garlic cloves and onion slices, and stir the mixture well until softened.
    • Now add tomato paste and seasonings: salt & pepper.
    • While mixing, add oregano and Worcestershire sauce.
    • Remember to keep the heat on medium to high.
    • Put in the beef broth now and mix gently.
    • Include the sliced veggies: potatoes and carrots; stir for 5-10 minutes.
    • Finally, add the brownish beef cubes into the mixture and cook on high for 25-30 minutes and natural pressure releases after every 10 minutes.
    • In the meantime, prepare cornstarch mixed with water for a thickness in the stew.
    • When everything is all cooked, add the cornstarch mixture and mix smoothly for 1-2 minutes.
    • Once the stew is ready, garnish it with fresh basil or parsley and serve it.
