    Marinated Summer Vegetables with Chicken Sausage Recipe that’s Quick to Prepare!

    There’s nothing better than to eat summer vegetables with chicken sausage in the summertime. It’s easy to prepare and delicious to eat. The best part is that you don’t have to take the stove heat on an already hot sunny day.

    Summer veggies like cucumber, tomatoes, carrots, and others make up a healthy and colorful salad plate. It’s not only refreshing but the salads like caviar and marinated summer veggies with chicken sausage are also nourishing for us. But you get the best of both worlds by adding chicken sausage to the mix. 

    And so, we decided to share our favorite summer vegetables with chicken sausage recipe with you. 

    Ingredients For Summer Vegetables With Chicken Sausage

    Oil (any)

    – 2/3 tbsp

    Ingredients for Marinade

    Salt (Himalayan, Pink, or Sea salt)

    – To taste

    Black pepper

    – To taste

    Vinegar

    – 2-3 tbsp

    Lime juice

    – 3-4 tbsp

    Chopped garlic

    – 2-4 cloves

    Summer Veggies

    Tomatoes

    – Smaller tomatoes in halves, big tomatoes in cubes (1 to ½ cups)

    Cucumber

    – 1-2 cucumbers – sliced or julienne.

    Red onion (medium-sized)

    – One onion – sliced or large dice.

    Bell pepper
    – 1-2 sliced or paysanne.

    Green beans
    – 1 to ½ lbs (without ends). 

    Zucchini (medium-sized)
    – 1 – sliced

    Crookneck squash

    – Two squashes – sliced

    Chicken Sausage

    – 3-4 chicken sausages – sliced. 

    Presentation

    Fresh basil

    – 2-3 tbsp – chopped.

    Instructions for Summer Vegetables with Chicken Sausage

    Before we get to the recipe, there are a few things that you should know. 

    Tips to Know Before You Start Making Salads:

    1. Chicken sausage should be 100% natural with zero preservatives if you want to avoid the high sodium intake.
    2. Cut the veggies beforehand for quick meal preparation. The cutting can take around 30 to 50 minutes.
    3. You can store the leftovers in an airtight bag in the fridge.

    As you’re now well-prepared to begin preparing the summer veggies with chicken sausages, let’s now get to the instructions. 

    Prepare the Marinade

    1. Add the marinade ingredients (Olive oil, lime juice, vinegar, salt, and garlic) in a bowl.
    2. Mix all the marinade ingredients with a spoon or a whisk, so it’s well-blended.
    3. Set aside the marinade.

    Marinate the Veggies

    1. Pick a bowl to put the veggies you want to marinate in. You can use a bowl or a sealed bag as a container. 
    2. Pour the marinade on the veggies and mix well with a spatula or shake the bag.
    3. Leave the bowl uncovered for half an hour so summer veggies can soak the marinade properly.

    Once these steps are followed, turn on your oven to preheat your sheet pans. It’s okay if you don’t have the oven, use your sheet pans instead.

    Broil Summer Vegetables with Chicken Sausage 

    1. Take a flat, surfaced dish and lay all the veggies and chicken sausages evenly on the sheet. Make sure there’s no overlapping, so everything is well broiled/grilled. 
    2. Put the dish in the oven. 
    3. Let the summer vegetables with chicken sausage broil for 5 to 10 minutes. 
    4. Flip the veggies’ sides after 2-3 minutes and see if it has softened to eat. 
    5. Dish out the summer veggies with chicken sausages once they are ready, and sprinkle them with fresh basil for a refreshing touch.
