    • Green bell pepper

    • 1 Onion medium, chopped
    • 1 Green bell pepper medium, chopped
    • 1 Red bell pepper medium, chopped
    • 1 clove Garlic coarsely chopped
    • 2 cups low-sodium vegetable broth Organic
    • 1 Can diced tomatoes 14.5-oz., no salts added
    • 2 Can chickpeas (Garbanzo beans) 15-oz., rinsed, drained
    • 1 tbsp Curry powder
    • 1 tbsp Pure maple syrup
    • 1 tbsp Fresh ginger finely chopped
    • ½ tsp Himalayan (Sea) salt
    • ½ tsp Ground black pepper
    • 1 Ground Cayenne pepper dashed, optional
    • 1 Cauliflower medium head, cut into florets
    • 1 Baby spinach 10-oz. Bag, raw
    • 1 cup Coconut milk lite


    • Take a medium nonstick skillet and preheat the oil in it over a high flame.
    • To cook onions, put onions, and bell peppers into the oil.
    • Stir frequently for 5 minutes. Let the onions get translucent.
    • Now it’s garlic’s turn! Add garlic and frequently stir for a minute or so.
    • In a 3-quart slow cooker, place the onion mixture.
    • Include tomatoes and their juice, chickpeas, maple syrup, curry powder, and broth.
